  • 8-10 dried butterfly pea flowers.
  • ⅓-½ cup light coloured honey (or more as desired).
  • 1 cup freshly squeezed lemon juice (or more to taste). If you use organic lemons, save the rind to make lemon pepper spice.
  • 5 cups filtered water (optional: 1 cup filtered water and 4 cups sparkling water).
  • Ice cubes.
  • Optional extra lemon slices and/or butterfly pea flowers for garnish.

Instructions

  • Bring 5 cups of water to a boil.
  • Remove the tea kettle or pot from the heat and stir in the butterfly pea flower petals. Set aside for one hour, covered with a lid.
  • While the flowers are steeping, squeeze the lemon juice and place it aside.
  • When the butterfly tea has been prepared, filter it and stir in the honey and lemon juice. Whisk the ingredients until it is completely mixed.
  • Add the remaining 4 cups of sparkling water to the sweetened blue tea, then fill your serving glasses with ice cubes.
  • Pour the lemonade into the serving glasses and serve.

3. Butterfly Pea Tea ICE CUBES

Blue ice cubes would spice up any drink, but add an addition of acidic liquid, such as lemon juice, and watch some real magic happen!

Ingredients

  • 4 cups of very hot water.
  • ¾ cup butterfly pea flowers.

Equipment

  • Ice cube trays

Instructions

  • Steep the pea blossoms in boiling water for 2 minutes.
  • Pour the liquid into ice cube trays after straining it.
  • Freeze until completely solid.

4. A BUTTERFLY PEA TEA LATTE

Ingredients

  • ¾ cup butterfly pea flowers.
  • full-fat milk.
  • Honey.
  • Ice cubes.

Instructions

  • First, soak the Butterfly pea blooms in boiling water for 5 minutes, or until totally cool. If you're using the powder, steep the tea for 3 minutes as directed on the instruction card.
  • After that, strain it into a tall serving glass. Add honey and ice cubes, then top with frothed milk. I prefer coconut milk since it softens the woody flavour of the pea flower. If you want a frothy top, use full-fat milk or a combination. Warm the milk before frothing to get lovely, frothed milk.
  • Stir and enjoy!

Ingredients

  • Buckwheat flour.
  • White rice flour
  • Agave syrup / Sugar syrup
  • Rice milk
  • Butterfly pea flower powder
  • Baking powder
  • Chocolate Sauce

BUTTERFLY PEA FLOWER POWDER

Butterfly pea flower powder is made by grinding organic, dried butterfly pea flowers. This powder is perfect for coloring raw cheesecakes, morning smoothies, pasta, rice, pancakes. It has a gorgeous blueish-purple hue

Instructions

  • In a medium-sized mixing bowl, mix buckwheat flour, white rice flour, butterfly pea flower powder, and baking powder.
  • Mix in 160 mL rice milk and agave syrup with a hand mixer until fully blended. Sweetness can be adjusted.
  • If the batter is too thick, add 1 tablespoon more rice milk.
  • Preheat the pan over medium-low heat after coating it with coconut oil.
  • Make a small circle with the batter (I used 1 tablespoon for each pancake). When the pancakes begin to bubble and the bottom is lightly browned, turn them over and cook for a few minutes on the other side.
  • Serve pancakes with chocolate sauce and top with blueberries and mint leaves.
